Takes about 10 minutes from start to finish.
Ingredients:
Leftover meat - Any pre-cooked meat will do; hamburger patty, steak, pork, chicken, etc.
Potato* - Cooked baked potato (If you don’t have a cooked baked potato, cook one in the microwave Don’t over-cook, leave firm.)
Eggs - raw
Cheese - any shredded will work
Leftover vegetables - optional
Tomato - uncooked, optional
Olive Oil - from a bottle, not a person
Seasonings - salt, pepper, etc
The amounts of each ingredient would depend on how much leftover you have and how many you want to feed. If you don’t have enough of one ingredient like meat, put in another potato or egg. Normally I use one small or medium potato and two eggs per person in the recipe. If you don’t have any leftover meat, use a hotdog or any deli meat like sliced turkey, bologna, etc. Don’t be afraid to use different meats together.
1. If you don’t have a cooked baked potato, start by cooking it in your microwave. Wash it, poke it with a fork, and wrap it with a paper towel. Most microwaves will cook a medium size potato in about 3 ½ to 4 minutes. More potatoes will take more time. Once cooked, stick it with a fork to see if it’s done.
2. While your potato is cooking (if necessary), put a large skillet (non-stick is easier) on a medium heat and pour in about 2 or 3 table spoons of olive oil.
3. While your pan is heating up, cut your meat and vegetables (separately) in ½ inch or smaller chunks. Put your eggs and shredded cheese in a bowl and whisk with a fork.
4. Cut up you cooked potato into ¼” slices and quarter in pieces.
5. Once your pan has heated up, place you cooked potato in the pan and brown to your liking. A minute or two before your potato is done, add the meat. You can add your vegetables now or wait till later. Us a spatula to turn and move your food to evenly heat and brown. Remember to season as you go along and taste so you don’t over season.
6. Once your potato and meat are ready, move it to one side of the pan. (Depending on the amount of potatoes and egg to be cooked, you may have to temporarily take out the potato and meat.) Put your egg and cheese in the pan and cook as you prefer. If you haven’t added your vegetables yet, cook them with the eggs now. Season to taste.
7. When your eggs are cooked to your preference, mix in the potatoes and meat and add your diced tomato. Mix and continue to cook for about a minute. Your breakfast is ready to serve.
* You may substitute cold, cooked rice for the potato. You just won’t have to brown the rice, but mainly heat up. When I am short on time, I leave out the vegetables and use rice.
I use as few dishes as I have to, so it normally takes me 1 -frying pan, 1- bowl to wisk eggs, and 1- plate. If more people, more plates, but I do all my cutting on an appropriate plate to reduce clean-up.
Remember, cooking is an art, not a science. Have fun, and if it’s not just right, you can try again in 24 hours.
